Canning Pickles - My Dill Pickle Recipe

I know...your saying who isn't canning this time of year right?
Well, I don't do much, but pickles are a MUST HAVE here.



Over the years I've used many kinds of cucumbers, and have settled on just 2-3 that I think make the best pickles.

They are all from Burpee Seed Company and you can find them here.

This year I planted;

Burpee Pickler Hybrid (62547A)
And
Spacemaster (51789A )



Here we love a super dill pickle...one that makes your eye's water & your mouth pucker on the
first bite!
Now, I use apple cider vinegar, most recipes call for white...but I like the flavor of the cider better.
If you like white then just change it in the recipe.

Spicy Dill Pickles
makes 8 quarts

Ingredients
  • 2 overflowing quarts of pickling cucumbers, sliced into fat coins*
  • 4 cups apple cider vinegar
  • 4 cups water
  • 5 tablespoons pickling salt
  • 16 garlic cloves, peeled 
  • 1/8 teaspoon crushed red pepper per jar
  • 1/2 teaspoon dill seed per jar 
  • 1/2 teaspoon dill weed per jar
  • 1/4 teaspoon black peppercorns per jar 
  • 1/4 teaspoon mustard seed per jar
  • 1/4 teaspoon celery seed per jar

Instructions
  1. Wash and slice the cucumbers, cutting a little bit off both ends to discard.
  2. In a large pot, combine vinegar, water and salt. Bring to a simmer.
  3. Arrange clean hot jars on counter and add the spices & garlic to each. Pack the cucumber slices firmly into the jars. You don’t want to damage the cukes, but you do want them packed tight.
  4. Pour the brine into the jar, leaving ½ inch headspace.
  5. Wipe rims, apply lids and rings and process in a boiling water bath for 15 minutes.
  6. When 15 minutes are up, promptly remove the jars from the pot and allow them to cool on the countertop. When the jars are cool, check the seals (by pushing/tapping on the lid).
  7. Pickles can be stored for up to a year.
  8. If you want to skip the boiling water process, these pickles are also wonderful as refrigerator pickles. Just pop the jars into the fridge once they’re cool.

I hope you enjoy them....and make plenty..we always run out before Spring.





Here, we see how long everybody can wait to open the first jar. USUALLY we have it for Thanksgiving....BUT it seemed 2 hours was as long as hubby and son could last this year. Oldest daughter got into her's as soon as she got them home.
