Canned Apple Cake Recipe & Bits Of Autumn..


In October my hubby & I celebrated our 25th anniversary....did I ask for diamonds, silver, or a new car?
Heck no....I asked to take a drive to our favorite apple orchard.
Doesn't sound very romantic does it? 
It is actually a beautiful 3 hour drive into Wisconsin right along the Mississippi river.
I even remembered to take my camera....but I forgot my card.
Don't ask. So on the return drive home...hubby stopped at Walmart & picked up a card so I could take pics on the way home.
I'll share these in a future post...

Today I want to share my Apple Cake in a Jar recipe.
This is a recipe I've been making for's so delicious & it even makes
a wonderful gift.

You are going to want to use a nice pie apple...or if you love your sour apples...toss in some nice sweet ones for a tasty mix.

This makes 7 pint jars


2/3 c shortening
2-2/3 c sugar
4 eggs
1 tsp cinnamon
1 tsp baking soda
1/2 tsp baking powder
1-1/2 tsp salt
3 c flour
2/3 c water
3 c peeled & grated apples
2/3 c raisins
2/3 c nuts (optional)

Mix together ingredients in the order given.
I double this so I mix in a large bowl all by hand.
Pour into well sprayed jars...1/2 full
Bake at 325* for 45 min.
Boil your lids as these are baking.
Place your lids on the cakes as soon as you take them out of the oven.
**Use ONLY Wide mouth Pint Jars.

These cakes have a 1 year shelf life.

I took the rings off and tied some beautiful old homespun I had on hand.

I used an assortment of old holiday ribbons....they look so festive!
Add these to a basket of goodies or give just a jar with the recipe.
